Day 19 Pancakes With Just 2 Ingredients

1 Banana So the internet has been going crazy about making pancakes or flapjacks as we would call them, with just 2 ingredients. Well first of all I thought it was just a lot of rubbish because how can just those 2 ingredients make anything as stable as a pancake? So the recipe goes like this: slice one ripe banana into a bowl and mash the banana up, break two eggs into the mashed banana and mix well or beat or just put everything into a blender and pulse until mixed. Either spray your frying pan with a non-stick cooking spray, some coconut oil or a knob of good old butter would do the trick too. Get your pan nice and hot and then drop spoonfuls into the pan, as soon as it is browned turn it over and repeat on the other side, just takes a minute or two. 6 pancakes Well, I tried it and it does work, a little thinner than our good old flapjacks but not bad at all, the mixture produced 6 pancakes. The texture is much lighter and a little different but a great recipe for anyone on a diet or on the banting diet. I think it could be tweaked with the addition of some desiccated coconut or some almond flour but I am sure with a bit of imagination this recipe could be tweaked in any direction. Try it and enjoy.

Day 17 Steppe Buzzards Visit The Cape Again

buzzard 3 Steppe Buzzards migrate to the Cape each year from the Russian climes, they are magnificent raptors with colour ranging from near white to the darkest chocolate brown and every mix of colours in between. They are of the most beautiful raptors to be seen.

Day 16 A Red Dragon

red dragfly Beautiful dragonflies everywhere, red ones, golden ones, blue ones and even deep blue almost black ones. These winged dragons whizz around the waterways and remind me of winged horses from fairytales. Any way they are fascinating and fearsome creatures.

Day 15 A Cauliflower And Broccoli Oven Bake

Oven bake I am always trying to rethink vegetables and how to make them more enticing or different so today decided it would be good to do a curried oven bake with cauliflower, broccoli, onion, red peppers, curry powder, chilli flakes and olive oil. Hope it turns out good :)

Day 11 Secretary Bird In The Wild, What A Surprise!

secret bird On a trip up the West Coast, we were amazed to sight a Secretary Bird alongside the Road. We screeched to a halt, reversed and there it was, busy trying to catch something in the grass. It was so thrilling to see as this is the very first time we have ever seen one in the wild, we watched it until it flew off way back onto the farmlands. So happy to know they are still surviving here in the Cape. We sighted this bird just a few kilometres before Velddriff on the West Coast of the Cape.
